Another TechnoCocktail to follow DATA. We all know computers work in bits and bytes. Here’s a byte in cocktail form.
- B for Blackberry liqueur
- Y for Yuzu juice
- T for Tequila
- E for Elderflower liqueur and sparkling elderflower
We’re following a standard Margarita template (an instance of the Sidecar template in the excellent Cocktail Codex). A Sour (like the famous Whisky Sour) would be a simpler mixture of spirit, citrus and sweetener; a Sidecar (like a Margarita) contains flavourful liqueurs, that bring both sweetness and seasoning. In this recipe, we have yuzu juice standing in for lime juice, providing a deliciously aromatic sour note. The blackberry and elderflower liqueurs add complexity and sweetness, and replace the triple sec orange liqueur in a Margarita. The final top up of sparkling elderflower is optional, but gives it a gentle fizz and lightens it slightly.
Overall the mixture of blackberry and elderflower gives this a very English fruitiness, sitting on top of the Margarita backbone.
BYTE cocktail: Blackberry, Yuzu, Tequila, Elderflower

Ingredients
20ml Yuzu juice
50ml Tequila blanco
12.5ml Elderflower liqueur (like St Germain)
50ml Sparkling elderflower drink (optional)
Directions
- Mix the first 4 ingredients in a cocktail shaker and shake with ice
- Strain and pour into a small rocks glass
- Top up with sparkling elderflower, if using
Notes
- Yuzu juice is hard to track down and expensive. If you’re not being obsessive about achieving the BYTE acronym, substitute lime juice. Otherwise it is available at Waitrose. As is sparkling elderflower presse.
