Damsondora 52 – damson and ginger highball cocktail

A variation of the Floradora, which is a fruity and easy going highball cocktail mixing gin, lime, raspberry (creme de framboise or raspberry syrup) and ginger beer, named after Florodora Girls, and Edwardian-era musical comedy in London and Broadway. In this one I replace the raspberry with damson, add some almond orgeat and cardamom whose flavours are a classic match with the damson. And then I mix in the idea of the London Calling, a contemporary London cocktail that has gin, sherry, lemon, by adding the nutty complexity of some fino sherry.

A long fruity cocktail with damson and ginger flavours, and some aromatic nuttiness from sherry, cardamom and orgeat. Created June 2021.

Ingredients

  • 25ml gin

  • 25ml fino sherry (I used Tio Pepe)

  • 25ml lime juice

  • 10ml damson syrup

  • 5ml cardamom syrup

  • dash orgeat

  • 100ml ginger beer

  • 50ml sparkling water

  • Cardamom Syrup
  • 1 tbsp cardamom pods

  • 8 tbsp sugar

  • 4 tbsp water

  • Damson Syrup
  • The absolute best syrup is the soaking liquid from pickled damsons. If you haven’t got that handy:

  • 100ml water

  • 100g sugar

  • 100g damsons

Directions

  • Shake first 6 ingredients over ice
  • Add to a highball glass with ice cubes
  • Top with the ginger beer
  • Add sparkling water if you’d prefer it longer and less strong
  • Cardamom Syrup
  • Mix the ingredients in a saucepan
  • Simmer covered for 15 mins, ensuring sugar dissolves
  • Leave to cool
  • Damson Syrup
  • Mix the ingredients in a saucepan
  • Simmer covered for 30 mins, ensuring sugar dissolves
  • Strain and keep refrigerated
